Ingredients

  • 1/2 cup butter
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 (4.5 ounce) can mushrooms, drained
  • 1 (6 ounce) package herb and garlic feta, crumbled
  • 1 (8 ounce) package shredded Cheddar cheese
  • salt and pepper to taste
  • 1 (9 inch) unbaked deep dish pie crust
  • 4 eggs, beaten
  • 1 cup milk
  • salt and pepper to taste

Cooking Instructions

Preheat oven to 375 degrees F (190 degrees C).

In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.

In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.

Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

Great But ...

I used fresh spinach ... but I had too much for on pie. I end up puting it in 2 pie shells, and added 2 more eggs. It was great, but I can't see how this could have all fit in one pie shell. Maybe becaused I used a whole bag of baby spinach that I ran through my food processer for a few minutes. Not sure where they came up with a cook time of 40 mins. The directions tells you to cook for 15 min, then add more cheese to the top and cook for additional 35-40 mins. Do the math ? Other than that ... I can't wait to make it again and share it with friends and family ... the flavor was great!

Spinach Quiche

I'm concerned about how the egg mixture gets "thoroughyl combined with the spinach mixture. Shouldn't you mix it all together before you pour anything into the pie shell?

    This savory deep-dish pie features herbed feta cheese that melts and mingles in every bite. The cheese is sauteed and mixed with spinach, mushrooms, Cheddar cheese and lots of garlic. This mixture is then combined with milk and eggs, and poured into a prepared crust. A bit more Cheddar cheese is sprinkled over the top, and then the quiche is slipped into the oven until it 's set.
