Squash & Onion Baked Red Snapper

Ingredients

  • 2 8oz Red Snapper Fillets, with skin
  • 1 tsp Salt
  • 2 tsp Black Pepper
  • 2 tsp Paprika
  • 1 medium Yellow Squash
  • 1/4 small Yellow Onion
  • 1 stick Butter, cut into 16 slices

Cooking Instructions

Wash fish first. Preheat oven to 375.

Slice the squash 1cm thin. Slice the onion in thin rings and separate.

Place a large piece of tin foil on a cookie sheet and roll up the ends to keep butter from spilling.

Place the fish skin side down and sprinkle with half of the seasonings.

Arrange half of the butter on top of the fish. Then arrange the squash and onions on top of the fish. Sprinkle the remainder of the seasonings and apply the rest of the butter.

Place in a 375 preheated oven for 12 minutes. Remove from oven and pour off the butter into a mug and repour over the fish, sqaush and onions, then put it back in the oven for another 13 minute.

Check the fish with a fork to make sure it is flakey and done. Enjoy!
