METHOD:
Heat oil in a heavy skillet over high heat. Add steaks and sear for 5 minutes per side when the oil is smoking. Remove steaks from pan and keep warm on a plate.
Remove fat from the pan. Add the vinegar and wine. Let cook until reduced to 4 Tablespoons and is syrupy. Whisk in 1 stick of butter and season to taste with salt and pepper.
Round Out the Meal:
Serve with steamed broccoli.
Kid Friendly:
Limit the pepper.
