Steve's banana pancakes.

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup whole wheat flour
  • 3/4 cup old-fashioned oats
  • 1 tbsp Splenda
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup Egg Beaters, or 1 egg
  • 1 1/3 cups 1% milk
  • 1 cup ripe banana, mashed
  • 2 tbsp canola oil

Cooking Instructions

In lg boql, combine the flours,oats,Splenda,baking powder and cinnamon. In a bowl, combine the Egg Beaters or egg,milk,banana and oil. Stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto cooking sprayed pan. Flip when bubbles form on top. Cook until second side is golden brown.

Recipe Notes

I cut up another ripe banana, and serve the pancakes w/ a few slices of banana on top, serve w/ real maple syrup. Makes 6 pancakes, 3 each person. Very healthy and delicious.
