Stew Eggplant with Rice

Ingredients

  • 1 Eggplant
  • 3 cloves garlic
  • 1 Medium Onion
  • 2 Tomatoes
  • 1 Lb If preferred Cooked Shrimp, Salted Fish, Chicken or Beef
  • 1/4 tbsp. Salt
  • 1/4 tbsp. Blackpepper
  • 2 tbsp. Cooking Oil
  • 2 Cups Cooked Rice (White or Brown)

Cooking Instructions

Cut eggplant like little finger size in container of water.

Chop union garlic and tomatoes. HEAT oil in medium skillet over medium-high heat for a few minutes.

Add eggplant salt and black pepper to taste. Cover and simmer for 10 to 15 minutes keep stirring throughout every few minutes apart.

After simmering for 15 minutes add cooked shrimp salted fish beef or chicken.

Serve over rice.
