Strawberry-Rhubarb Jam

Ingredients

  • 2 1/2 c. fresh or frozen strawberries, crushed
  • 1 1/2 c. finely diced fresh or frozen rhubarb
  • 2 1/2 c. sugar
  • 1 (8 oz) can crushed pineapple, undrained
  • 1 (3 oz) pkg. strawberry-flavored gelatin

Cooking Instructions

Combine strawberries, rhubarb, sugar, and pineapple in large kettle. Heat to boil, stirring frequently. Reduce heat and simmer 20 min. Remove from heat. Add gelatin and stir until dissolved. Pour into clean jars or freezer containers, leaving 1/2" head space. Cool. Cover, and refiigerate.

Recipe Notes

Must be kept in refrigerator or freezer because it has not been processed in a water-bath canner.
