Stuffed Baked Whole Fish

  • 1 whole fish (such as ling cod or red snapper), about 4 pounds, dressed
  • 1/2 recipe Celery Stuffing (p. 403)
  • 5 tbsp butter
  • Salt
  • Lemon wedges

Cooking Instructions

Preheat the oven to 450F. Cover the bottom of a baking dish with heavy-duty foil and butter the foil. Rinse the fish inside and out under cold running water; pat dry with paper towels. Fill with the stuffing and close with skewers. Rub the outside of the fish with 2 tablespoons butter and sprinkle with salt. Melt the remaining butter with 3 tablespoons water. Place the fish on the foil and bake 30 - 40 minutes, basting every 10 minutes with the melted butter. The fish is done when the flesh around the bone is opaque. To serve, make a deep cut along the backbone, then cut into pieces at right angles to the backbone. Serve with lemon wedges.
