heat oil in large pan add onion,saute till clear,add pepper saute till tender.Add zucchini and
saute till it loses its crunch.add
eggplant and garlic,saute till
translucent add tomates with juices.salt and pepper to taste.lower heat cook for 20 mins
mix with drained pasta. Add parmesean cheese
