Mix first 7 ingrediants and chill. Heat oil in saute pan and add mushrooms, zuchinni, and eggplant. Season with salt and cook until tender-crisp. Toast bread and brush with dressing. Top with sliced tomatos, eggplant, zuchinni, and mushrooms. Drizzle with remaining dressing and serve open faced.
A great sandwich when traditional meats just won't do!

08/17/09 03:21 PM | BARF!!!1/2 cup plus 1 tbsp? Sure a lot of olive oil. Anchovies? Zuchinni? I don't think so. As some others said, PB and J sounds lots better to me. Or almost ANYTHING else. Like beef, chicken or turkey, cheese, bologna, ham - you name it. But to be fair, it wasn't suggested for lunches for work or school. But just sounds terrible to me for anything. |
