Super-Easy Mushroom Soup

Ingredients

  • 2 tbsp. butter or 0 margarine
  • 2 tbsp. all-purpose flour
  • 2 1/2 cups Swanson® Chicken Broth or 0 Swanson® Natural Goodness™ Chicken Broth
  • 12 oz. fresh mushrooms , halved
  • 1/4 cup chopped onion
  • 1 1/2 tsp. chopped fresh thyme leaves or 0 tsp. dried thyme leaves
  • 1/4 cup light cream

Cooking Instructions

HEAT butter in saucepot. Add flour and cook and stir 2 min. Stir in broth and heat to a boil. Cook over low heat 10 min.

PLACE mushrooms and onion in food processor bowl. Cover and process until pureed. Add to broth mixture with thyme and cream. Heat to a boil. Cover and cook over low heat 5 min.
