Trim the chops of all visible fat. Place each chop on a doubled over piece of foil (or use heavy-duty foil) large enough to fold over the chop and vegetables.
Combine the salt, pepper, and oregano, and sprinkle each chop with one-quarter of the mixture. Then cover each chop with a layer of each different vegetable, a teaspoon of cheese, and a sprinkling of lemon juice.
Bring the longest edges of the foil together and roll down until it fits well across the top of the chop and vegetables, sealing them. Roll up the ends securely so that you have a neat package.
Place the 4 packages in a baking pan, in order to catch any juices. Bake at 350 degrees for 1 hour.
Serve in the package if you like; just be careful when unwrapping-it will be hot!
