Ingredients

  • 1 tbsp. vegetable oil
  • 3/4 lb. boneless beef sirloin steak or 0 beef top round steak
  • 3 cups V8® 100% Vegetable Juice
  • 1 can (14 ounces) Swanson® Beef Broth
  • 1/2 tsp. dried thyme leaves , crushed
  • 1/4 tsp. ground black pepper
  • 1 medium potato , cut into cubes (about 1 cup)
  • 1 medium carrot , sliced (about 1/2 cup)
  • 1 medium onion , coarsely chopped (about 1/2 cup)
  • 1 stalk celery , thickly sliced (about 1/2 cup)

Cooking Instructions

In Dutch oven over medium-high heat, heat oil. Add beef and cook until browned, stirring often. Pour off fat.

Add vegetable juice, broth, thyme, pepper, potato, carrot, onion and celery. Heat to a boil. Reduce heat to low. Cover and cook 30 min. or until vegetables are tender.
