In a large mixing bowl toss together the shredded broccoli, tofu, and coconut. Add mayonnaise mixture; toss to coat.
Line each rice paper with a lettuce leaf Spoon broccoli mixture over lettuce. Wrap rice paper around broccoli mixture. Serve with sauce.
Dipping Sauce: Stir together 1 tbsp soy sauce, 1 tbsp lime juice, and 1/4 teaspoon crushed red pepper.
