Sweet & Spicy Spring Rolls

Ingredients

  • 6 8-inch round rice papers
  • 2 tsp grated fresh ginger
  • 1 to 2 tsp wasabi paste
  • 1 tsp lime juice
  • 1/3 cup light mayonnaise dressing or salad dressing
  • 2 cups packaged shredded broccoli (broccoli slaw mix)
  • 1/2 of a 10-1/2-ounce package extra-firm tofu (fresh bean curd), drained and finely chopped (1 cup)
  • 1/4 cup flaked coconut
  • 6 romaine lettuce leaves
  • 1 recipe Dipping Sauce

Cooking Instructions

Carefully dip each rice paper quickly in water and place between paper towels or clean cotton dish towels. Let stand for 10 minutes.

Meanwhile, in a small bowl combine the ginger, wasabi paste, and lime juice. Stir in mayonnaise.

In a large mixing bowl toss together the shredded broccoli, tofu, and coconut. Add mayonnaise mixture; toss to coat.

Line each rice paper with a lettuce leaf Spoon broccoli mixture over lettuce. Wrap rice paper around broccoli mixture. Serve with sauce.

Dipping Sauce: Stir together 1 tbsp soy sauce, 1 tbsp lime juice, and 1/4 teaspoon crushed red pepper.
