Sweet Potato Batter Bread

Ingredients

  • 2 packages active dry yeast or 2 yeast cakes
  • 1/2 cup warm water
  • 1/2 cup mashed sweet potato or yam
  • 1/4 cup sugar
  • 3 tbsp butter, melted
  • 1 tbsp salt
  • 2 eggs
  • 3 to 3-1/2 cups all-purpose flour

Cooking Instructions

Proof the yeast in the warm water. Add the mashed sweet potato, sugar, butter, salt, eggs, and 1-1/2 cups flour. Beat several minutes in an electric mixer or by hand to blend well. Beat in the remaining flour to form a rather stiff dough. Cover, and allow to rise in a warm draft-free spot until doubled in bulk, about 1-1/2 hours. Stir vigorously with a wooden spoon or spatula. Transfer to a well-buttered 2-pound coffee tin or two well-buttered 8-1/2 x 4-1/2-inch loaf tins. Allow to rise again until doubled in bulk. Bake at 375F 35 to 45 minutes, or until nicely browned. After 5 minutes, turn out on a rack to cool.
