  • 2 tsp (10 ml) Salt
  • 1 tbsp Cinnamon, ground
  • 2 tsp (10 ml) Allspice, ground
  • 1 tsp Ginger, ground
  • 2 c Peanut oil
  • 2 lb (908 g) Brown sugar
  • 8 oz (227 g) Egg, beaten
  • 2 lb (908 g) Sweet potatoes, peeled, grated
  • 3 c (720 ml) Walnuts, chopped
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1-1/2 lb (680 g) Flour, whole wheat

Cooking Instructions

Combine in mixer bowl with paddle attachment. Mix to blend ingredients.

Combine in small bowl. Mix well. Add to flour mixture. Mix at low speed just until ingredients are moistened.

Add to mixture. Mix at low speed just until blended. Portion into four oiled or paper-lined 9" x 5" x 3" loaf pans. Bake at 350F until bread tests done when an inserted knife blade comes out clean, about 50 minutes. Cool on wire racks.
