First start by cooking sweet potatoes and then peel and place them in a mixer bowl with a flat paddle attachment
Turn to speed 2 and add milk, sugar, eggs, butter, nutmeg, and cinnamon And continue to mix for 1 minute
Spread the mixture in a greased casserole dish and now you can prepare the crunchy praline topping
In a bowl add melted butter, cornflakes cereal, chopped walnuts or pecans and brown sugar and mix.
Now take this topping and spread it over the sweet potatoes
Bake covered with aluminum foil for about 20 minuets.
Then remove the foil for the last 10 minuets of cooking so you can get a nice crunchy top

11/28/07 03:21 PM | Excellent Side DishI added 1 egg to the mixture and it was absolutely awesome. I made this for our family and then took it to a church function-where there were no leftovers for either get together! Beautiful topping when it is browned and makes the house smell like the holidays! |
