  • 2-1/2 cups whole-wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup light molasses
  • 1/4 cup packed light or dark brown sugar
  • 1/4 cup vegetable oil
  • 1 tsp grated orange or lemon zest
  • 2/3 cup yogurt or buttermilk

Cooking Instructions

Position a rack in the lower third of the oven. Preheat the oven to 375F. Grease a 9 x 5-inch (8-cup) loaf pan.

After each addition, stir or fold just until the dry ingredients are moistened. Do not overmix; the batter will be thick. Scrape the batter into the pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Let cool in the pan on a rack for 5 to 10 minutes before unmolding to cool completely on the rack.
