This fish dries out even when in prime condition; be sure to use plenty of butter in the cooking.
Preheat broiler.

Brush preheated broiler rack and: 3/4-inch-thick swordfish steaks
well with: Clarified Butter9
Place rack 6 inches from the source of heat. Broil 5 minutes. Baste, turn, baste again and continue to broil 5 to 8 minutes.
