Taco Soup

Ingredients

  • 1 small can green chiles
  • 1 can corn
  • 1 can pinto beans
  • 1 can kidney beans (optional)
  • 1 lb. ground beef (or turkey if you prefer)
  • 1 regular package chili seasoning
  • 1 package Hidden Valley Ranch Dressing Mix
  • 1 large can diced tomatoes

Cooking Instructions

Brown ground beef in a skillet. In a separate pot, mix all of the above ingredients together. Add ground beef and let simmer for roughly 45 minutes to an hour. It is such an easy and yummy recipe!! ( If you prefer to substitute any of the above ingredients for a lower sodium or lower fat alternative, it is just as good. Also, some people I know like to put a can of Ro-Tel in for extra flavor. This is also an optional alternative.) Enjoy!

Recipe Notes

I first tried this recipe when I was 8 years old. I completely turned my nose up at it when my great-aunt told us that was what was for lunch. I tried it and ate 4 bowls of it that afternoon. I've been hooked ever since!!
