Ingredients

  • 2 cups simple tomato sauce with extra chopped onions
  • 2 cups cooked, drained soybean flakes or cooked whole soybeans and/or pinto beans or cooked lentils
  • 4 to 6 jalapeño peppers, chopped and sauteed in 1 tbsp oil (or 1 small can chopped green chilis)
  • 2 to 4 tsp chili powder
  • 1/4 tsp cumin powder
  • 1 tsp sea salt
  • 12 oz cheese, grated
  • 20 taco shells
  • 4 cups salad greens, chopped
  • grated cheese
  • hot sauce

Cooking Instructions

Simmer the tomato sauce, bean flakes, peppers, and seasonings for 5 minutes.

Layer the bean mix and grated cheese in the shells.

Bake 5 minutes at 350.

Add chopped fresh greens to the other ingredients in the shells.

Serve immediately with more grated cheese and hot sauce.
