Tahini Carrot Spread

Ingredients

  • 1/2 cup tahini
  • 1 tbsp white or yellow miso
  • 1 tbsp water
  • 1 cup finely grated carrots (1 - 2 medium carrots)
  • 1 clove garlic
  • 2 scallions, finely chopped
  • 1 tsp tamari
  • 1 tbsp rice or wine vinegar

Cooking Instructions

1. Cream together the tahini, miso, and water until they are well blended. Add the remaining ingredients and mix well.

2. Use as a spread for sandwiches or crackers with your favorite garnishes.
