Tahini Dipping Sauce

Ingredients

  • 2 to 3 cloves garlic, peeled
  • 1/4 cup tahini
  • 4 tbsp lemon juice
  • 1/4 to 1/2 tsp salt
  • 3 tbsp cold water

Cooking Instructions

Crush the cloves of garlic to a paste. Put this paste in a stainless-steel or nonmetallic bowl. Add the tahini and beat it in with a fork. Add the lemon juice, beating it in as you do so. Now add the salt and mix it in. Add the cold water, a little bit at a time, beating in as well. (You could do all this in a food processor or blender, too.) Check the balance of sour and salt. Adjust, if necessary.
