Combine fresh salmon, smoked salmon, onion, parsley, chopped egg white, chopped egg yolk, olives, and capers in large mixing bowl. Season with lemon juice, olive oil, salt and pepper to taste. Arrange tartare mixture on 4 plates and serve with toast points or Melba toast.
Round Out the Meal:
With a cucumber-dill salad.
Kid Friendly:
Substitute flaked, poached salmon or best-quality canned salmon for fresh salmon.
