Tea and Berry Punch

Ingredients

  • 1-2/3 cups boiling water
  • 6 rosehip tea bags
  • 1/3 cup honey
  • 1 cup strawberries
  • 1/4 cup lemon juice
  • Sparkling mineral water
  • 4 strawberries, thinly sliced (garnish)

Cooking Instructions

Place the water in a Pyrex or stainless steel bowl. Add the tea bags, and allow them to steep for 10 minutes. Remove the bags, pressing out liquid from them. Stir in the honey. Refrigerate this concentrate until needed.

Just before serving, add the concentrate, strawberries and lemon juice to a blender. Blend on high speed for 1 minute. With the machine running at the lowest speed, add enough mineral water to fill the container completely.

Place sliced strawberries in a serving dish or small punch bowl. Add punch. Serve immediately.
