Combine corn meal and salt in bowl. Stirring mixture constantly, add boiling water in slow, thin stream. Beat until batter is smooth. Pat out hoe cakes (if mixture is too hot flatten with spoon). Place on cast iron griddle or skillet coated with bacon fat or butter and fry until golden brown. Turn over and repeat. Do not deep fry.
Hoe cakes are excellent with red beans, fresh sliced onions, and beef brisket.
