Thai Cucumber Salad

Ingredients

  • 1/4 tsp hot pepper flakes (1 ml)
  • Lettuce leaves
  • 1/4 cup chopped hazelnuts (50 ml)
  • 1/4 cup lime juice (50 ml)
  • 1/4 cup chopped fresh cilantro (50 ml)
  • 1 English cucumber
  • 2 tbsp rice or cider vinegar (25 ml)
  • 1 tsp sugar (5 ml)
  • 2 tbsp minced red onion (25 ml)

Cooking Instructions

Cut cucumber in half lengthwise. Cut into thin slices.

In a medium bowl, combine the cilantro, lime juice, onion, sugar, vinegar, and hot pepper flakes. Stir to dissolve sugar. Add the cucumber and toss gently. Cover and refrigerate for at least 1 hour.

When serving, line a bowl or platter with lettuce leaves. Using a slotted spoon, place cucumber mixture in center. Sprinkle with nuts.
