Heat sesame oil in a saucepan. Stir in garlic and cook slightly. Add honey, soy sauce, and Lite Salt. Stir to combine and set aside. When cool, add brown rice and mix well. Cover and refrigerate. When ready to make the sandwiches, add cilantro, cabbage, carrots, green onions, peanuts, and lemon juice.
To Prepare Thai Sandwiches: Cover tortillas and warm in the microwave oven or conventional oven to make them pliable. Spoon about 1/2 cup filling into center of each tortilla and fold all sides inward to make a pocket. The filling can also be spooned into pocket bread. Add more chopped cilantro, if desired.
