Thai Summer Rolls

Ingredients

  • 1 Rice paper
  • 1 Lettuce leaf
  • 1 Avocado
  • 1 Carrot
  • 1 Tofu
  • 1 Pepper
  • 1 Cucumber
  • 1 Hosin sauce
  • 1 Vinegar
  • 1 Sugar

Cooking Instructions

Soak the rice paper in hot water for about 1 minute.

Tear the lettuce leaf (preferably Romaine) into 6 equal parts

Combine pepper, avocado, tofu, shredded carrot and cucumber on top of the rice paper and lettuce.

Gently roll the contents to completion

Cut into six equal pieces or according to preference and refrigerate for five minutes

Mix the Hoisin sauce, vinegar and sugar in a small dish.

Recipe Notes

As any well versed diner will tell you, appetizers are a nice way to kick off a meal until the main course is served. Spring rolls and egg rolls are standard fare found on most Chinese menus and pretty much fit the bill—that is if you’re not too picky
