THREE BEAN SOUP

Ingredients

  • 1 TBSP OLIVE OIL
  • 2 EACH ONIONS, CHOPPED
  • 1 CLOVE GARLIC, MINCED
  • 1 28 OZ. CAN DICED TOMATOES, WITH JUICE
  • 1 19 OZ. CAN KIDNEY BEANS, WITH JUICE
  • 1 19 OZ. CAN GARBANZO BEANS, WITH JUICE
  • 1 19 OZ. CAN LENTILS
  • 3 TBSP. TOMATO PASTE
  • 1.5 TSP. DRIED OREGANO
  • 1.5 TSP. BLACK PEPPER
  • 1 TSP. SALT
  • 4 OZ. MOZZARELLA CHEESE, SHREDDED

Cooking Instructions

In a large pot, over medium high heat, add oil, and saute onions and garlic until golden brown. Stir in tomatoes, kidney beans, garbanzo beans, lentils, tomato paste, oregano, pepper, and salt. Turn heat to simmer, and cook for 20 minutes. Sprinke with cheese and stir until melted. Serve immediately. Can be frozen.
