Put 3 shallow metal 1-quart capacity or larger pans in freezer.
Put water and sugar in a 4-cup measure or pitcher and stir 4 to 5 minutes until sugar dissolves.
Remove pans from freezer. Grapefruit Granita: Mix 1 cup sugar mixture with the grapefruit peel and grapefruit juice in 1 pan. Orange Granita: Mix 1 cup sugar mixture with the orange peel and orange juice in another pan. Lemon Granita: Mix remaining 2 cups sugar mixture with the lemon peel and lemon juice and water in the remaining pan.
Place pans in freezer. When mixture starts to freeze, scrape frozen sides into center of pans every 30 minutes until citrus mixtures are frozen, about 4 hours. Serve or cover pans tightly with foil and freeze up to 1 week.
To serve: Scrape surface of granitas with a sturdy metal spoon (or an ice cream spade or scoop) and place a mound of each flavor in serving dishes. Immediately after serving, return unused granitas to freezer. If melted, repeat stirring as in Step 4.
