Slice cucumber at an angle into 1/4 inch slices. Sprinkle with salt
and top with vinager and red pepper flakes. Stir to make sure that all areas are covered. Cover with plastic wrap and refrigerate for 1 hour. Cut salami into 1/2 inch cubes. Cut farmers cheese into 1/2 inch cubes. Bring cucumbers to room temperature (30 minutes). Skewer cucumbers with salami and cheese and serve with crackers.
