Preheat the grill to the highest setting. Remove chicken from the marinade and grill over high heat until well marked, about 4 minutes. Turn to cook the other side, brushing with marinade at least once. Cook 3 to 4 minutes and remove. If preparing chicken in advance to be used cold in salads or to be added to soup or quesadillas, seal the cooked chicken tightly in plastic wrap and refrigerate until ready to use. After slicing, season the chicken again with salt and pepper.
