METHOD:
Mix cucumber, tomato, feta, mint, parsley, balsamic vinegar and olive oil together. Season with salt and pepper and divide among 4 plates.
In a medium hot saute pan, sear 4 lamb chops in 1 Tablespoon of olive oil. Cook for about 3 minutes on each side for a medium-rare. Repeat with remaining chops. Place chops on top of salad and serve.
Round Out the Meal:
With minted couscous.
