Tofu Dog Casserole with a Pretzel Crus..

Ingredients

  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 4 large carrots, diced (about 2 cups)
  • 8 fat-free tofu dogs
  • 6 cups Baked Beans, prepared at least 1 day ahead or 3 cans vegetarian baked beans
  • 6 frozen fat-free pretzels
  • Mustard in a squeeze bottle (garnish)

Cooking Instructions

1. Preheat oven to 350.

2. Cook potatoes in boiling water until tender, but not mushy, about 20 minutes. Drain.

3. Blanch carrots in boiling water until just tender, about 6 minutes.

4. Cut each tofu dog into 5 pieces.

5. In a large bowl, toss together baked beans, tofu dogs, carrots and potatoes.

6. Divide mixture among 6 small casserole dishes. Cover each with a frozen pretzel.

7. Bake in preheated oven until pretzel is soft and slightly crunchy and filling is heated through, about 30 minutes.

8. Decorate the top of each casserole with mustard stripes or any other design you please, squeezed from a plastic bottle.
