Heat a heavy 10-inch nonstick frying pan over medium heat until hot. Add 1 teaspoon of the oil and swirl to coat pan. Add white parts of scallions and garlic and cook, stirring, until aromatic, about 30 seconds. Add mushrooms and cook, stirring, over high heat until mushrooms are slightly softened and are about to release their juices, about 45 seconds. immediately transfer mixture to a plate.
In a food processor fitted with the metal blade, pulse tofu a few times. Add curry powder, soy sauce, egg whites, rice, sesame seeds, green parts of scallions, and mushroom mixture. Process a few seconds until just blended. Add bread crumbs and pulse a few times to combine. Form mixture into 8 patties about 1/2-inch thick and 3 inches in diameter.
Heat the frying pan over medium heat until hot. Add another 1 teaspoon of the oil and swirl to coat pan. Pan-fry 4 patties at a time until crisp and browned, 4 to 5 minutes per side. Transfer to a plate. Add remaining teaspoon of oil to pan and fry remaining 4 patties. Place cooked patties on a warm serving plate. Garnish with cilantro and serve.
