Ingredients

  • 4 large ripe tomatoes, sliced
  • 1 red onion, sliced thin
  • 6 sprigs of fresh thyme, coarsely chopped
  • 5 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Coarse kosher salt and freshly ground black pepper to taste

Cooking Instructions

Arrange alternating layers of tomato and onion slices on a serving platter. Sprinkle with chopped thyme. Whisk together the oil and vinegar. Season with salt and pepper. Immediately before serving, spoon the desired amount of vinaigrette over the salad.
