Set your oven to 425 degrees. Put 2 Tablespoons of bacon grease into an 8 inch square pan or round cast iron skillet. Stir it in the oven until it sizzles, being sure to tilt the pan so that it's coated evenly all over. Work fast or take care that the pan doesn't get too hot and start to smoke. If it does, take it out or lower the oven heat until just before your batter goes in.
Sift together your flour, baking powder, salt and sugar until well combined. two or three times if necessary. (You can add a touch more sugar if you find you like it sweeter). Then stir in your cornmeal.
Using a seperate bowl, beat your egg lightly with a fork or whisk. Now make a well in the center of your dry ingredients and pour egg, milk, and the rest of the bacon grease. Beat vigourously for about 1 minute. Pour you batter into the hot pan and bake for 20 to 25 minutes or until golden brown.
Serve piping hot and dripping with butter
