1. For the filling, heat the oil in a skillet; saute the leeks until soft. Remove from heat and place in a large bowl.
2. Add the potatoes and the remaining ingredients; blend well.
3. Now make the crust: Blend together all the ingredients until a thick dough is formed.
4. Using a rolling pin, roll out 2 circles, one approximately 10 inches in diameter, the other approximately 12 inches.
5. Place the larger circle in a 9-inch pan that has been greased with olive oil; the dough should slightly hang over the edge of the pan. Add the ingredients for the filling.
6. Cover with the smaller circle of dough; roll the edges of the larger circle into a wide border. Press firmly in place.
7. Bake in a preheated 350 degree oven for 1 hour.
8. Serve hot with a mixed salad.
