Ingredients

  • 1 can (16 ounces) fat-free refried beans
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups finely chopped mixed lettuces
  • 3 tablespoons minced pickled jalapeño peppers
  • 1/2 ripe avocado, halved, seeded, peeled and diced
  • 1 plum tomato, diced
  • 48 round tortilla chips

Cooking Instructions

Heat beans in microwave or in a saucepan over low heat.

In a medium bowl whisk oil, lime juice, salt and pepper until blended. Stir in lettuces, jalapeños, avocado and tomato. Spread beans on chips; top with lettuce mixture. Serve immediately.
