Ingredients

  • 1.5 cups plain (all-purpose) flour
  • 2 tsp caster (superfine) sugar
  • 3 oz butter or margarine
  • 1 egg yolk
  • 8 oz golden (light corn) syrup
  • 1 cup fresh breadcrumbs
  • 1 tbsp lemon juice
  • Cream, Custard Sauce or ice cream to serve

Cooking Instructions

Mix together the flour and sugar and rub in the butter or margarine until the mixture resembles coarse breadcrumbs.

Mix to a firm pastry (paste) with the egg yolk, wrap in clingfilm (plastic wrap) and chill for 30 minutes.

Roll out on a lightly floured surface and to line a greased 20 cm/8 in pie dish.

Warm the syrup, then stir in the breadcrumbs and lemon juice and leave to cool.

Pour into the pastry base and bake in a preheated oven at 180°C/350°F/gas mark 4 for 35 minutes until set and golden.

Serve hot or cold with cream, Custard Sauce or ice cream.
