Ingredients

  • 8 ounces whole-wheat spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 2 anchovies, minced (optional)
  • 1/4 teaspoon crushed red pepper, or to taste
  • 1 28-ounce can diced tomatoes
  • 1 6-ounce can chunk light tuna, drained and flaked
  • 2 tablespoons thinly sliced fresh basil

Cooking Instructions

1. Bring a large pot of water to a boil. Cook spaghetti, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain.

2. Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 1 minute. Add anchovies (if using) and crushed red pepper and cook for 30 seconds more. Add tomatoes, reduce heat to medium and cook, stirring occasionally, for 8 minutes. Stir in tuna and cook until it is incorporated into the sauce and heated through, 2 minutes more. Divide the spaghetti evenly among 4 plates, top with sauce and garnish with basil. Serve hot.

Tuna Pomodoro

This was a simple inexpensive meal with great taste for my family of 5 that worked out well. Having young children (3) a bit picky (3-10 yr olds) I dropped the Anchovies and doubled the tuna to 12 oz. I did not drain the tomotoes or the Tuna (in water), but allowed them to simmer down by adding 8 minutes to the cooking time. I also did not add basil, but added a sprinkle of dill for flavor. The flavor truly comes out if you allow the finished Tuna mixture to rest for 30 minutes after cooking. Try it - It's totally different immediately cooked and after resting - it's mildly sweet with a hint of pepper zest. This meal will make it into my monthly line up of weekday meals. Total Preperation and Cooking time was 1 hour - That includes cutting, heating pans, cooking, and serving, as well as, adding an additional 30 minutes for resting and reheating of dish for 5 minutes. Next time I'm cooking it with Anchovies for my wife and meself. Warning - Originally I would have rated this as a 2 Star if I had not given it the extra 30 minutes to "Flavor Up"....
