Shape turkey into 6 patties, 1/2-inch thick.
In medium skillet over medium-high heat, heat oil. Add patties and cook in 2 batches until browned. Set patties aside. Pour off fat.
Add soup and water. Heat to a boil. Return patties to pan. Reduce heat to low. Cover and cook 20 min. or until patties are no longer pink.
Place cheese on patties and cook until cheese is melted. Serve on rolls. Top with onions.
