Turkey Chowder

Ingredients

  • 1-1/2 tbsp butter or margarine
  • 1 large onion, thinly sliced (about 1 cup)
  • 1/4 cup chopped green pepper
  • 1-1/2 cups broth (chicken or turkey)
  • 2 cups diced carrots (3 medium)
  • 3 cups peeled, diced potatoes (3 medium)
  • 1 cup thinly sliced celery (2 medium stalks)
  • 1/2 tsp salt, if desired
  • 3 cups cooked, diced turkey
  • 1 17-ounce can cream-style corn
  • 2 tbsp chopped pimiento or roasted red pepper
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp AHA herb mix or other no-salt seasoning
  • Freshly ground black pepper to taste
  • 3 cups low-fat milk
  • 1/4 cup finely chopped fresh parsley or 1 tbsp dried parsley flakes

Cooking Instructions

1. In a large saucepan, melt the butter or margarine, and saute the onion and pepper until they are tender.

2. Add the broth and carrots. Heat the chowder to boiling, reduce the heat, cover the pan, and simmer the chowder for 5 minutes. Add the potatoes, celery, and salt. Simmer the chowder, covered, for another 10 minutes or until the potatoes and carrots are tender.

3. Stir in the turkey, corn, pimiento, thyme, herb mix, pepper, and milk. Heat the chowder thoroughly, but do not let it come to a boil.

4. Just before serving, sprinkle the chowder with chopped parsley.
