Soak turkey submerged in cold water for 1/2 hour. Remove turkey from water and cover completely inside and out in course salt for 1 hour and allow to drain on a rack in the sink. Rinse turkey thoroughly and hand rub sage into turkey. Salt and pepper the turkey inside and out with other ingredients. Cover turkey completely with Mayonaise and Orange Marmalaide. Place turkey in roaster and allow to cook for 1 1/2 hours. Turkey will cook quickly and be moiste and juicy. Rinse
After proper prep, the Turkey will take less time to cook than the usual 2 hours.
