Turkey with Stuffing

Ingredients

  • 1 tablespoon vegetable oil
  • 16 ounces turkey cutlets
  • 1 box (6 ounces) range-top corn-bread-stuffing mix with seasoning packet
  • 1 can (151/4 ounces) whole-kernel corn, drained 3/4 cup low-fat turkey gravy

Cooking Instructions

Heat oil in a large nonstick skillet over medium-high heat. Add turkey and cook 30 to 45 seconds per side until lightly browned (cutlets will not be fully cooked). Remove to platter.

Pour 12/3 cups water into skillet. Stir in contents of stuffing seasoning packet. Reduce heat, cover and simmer 5 minutes.

Stir in stuffing crumbs and corn. Top with turkey cutlets, slightly overlapping.

Spoon gravy on turkey, cover and cook over medium-low heat 5 minutes or until turkey is opaque at center and gravy is hot.
