Tuscan-Style Tuna Salad

Ingredients

  • 2 6-ounce cans chunk light tuna, drained
  • 1 15-ounce can small white beans, such as cannellini or great northern, rinsed (see Ingredient note)
  • 10 cherry tomatoes, quartered
  • 4 scallions, trimmed and sliced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • Freshly ground pepper to taste

Cooking Instructions

Combine tuna, beans, tomatoes, scallions, oil, lemon juice, salt and pepper in a medium bowl. Stir gently. Refrigerate until ready to serve.

Ingredient Note: When you use canned beans in a recipe, be sure to rinse them first in a colander under cold running water, as their canning liquid often contains a fair amount of sodium.

Delicious. It doesn't say how large a serving size is, but I calculated it to 1/2 Cup. Very good for those counting points. I added celery seed and just used diced tomatoes instead of cherry. Definately will make again.

Tuscany Tuna Salad Review

Yes it is delicious but why is everything now that has olive oil labeled "tuscany" pllllease! Tuna in olive oil, oregano, salt, pepper and lemon on a nice italian bread with good tomatoe slices and red onion is italian enough for me! It screams Italian all over! : )

I substituted chickpeas for the white beans! Very good!

THE INSTRUCTIONS DO NOT SAY TO DRAIN EVERYTHING.. I DID SO.. AND ALSO USED PART OF A VALADIA ONION.. CHILLED THIS BEFORE SERVING... TURNED OUT VERY NICE... MY PICKY EATERS LIKED IT.. A MIRACLE
