Clean and partially peel Red potatoes and place in boiling salted water. Boil for 20 minutes or until fork tender. While potatoes boil thinly slice Red Onion and prepare garlic cloves. Add to small sauce pan with 1 stick unsalted butter with a pinch of salt and cracked pepper. Cover and heat on med. low till onions are translucent. When Potatoes are done, drain and place back in pot, add butter mixture and sour cream. For best results use an old fashioned potato masher till ingredients are mixed. Add 2/3 Cup of cheese and fold with a spoon. Place in oiled baking dish and cover with remaining cheese. Cover with foil and bake in a pre-heated 350 degree oven for 25 minutes, remove foil and bake 5 more minutes until cheese is toasty
This meal turned into a favorite and I've given this recipe to family and friends. You can also serve as mashed potatoes with out baking
