Ingredients

  • 1 cup fresh or frozen cranberries
  • 1/3 cup granulated sugar
  • 4 1/2-in. slices light fat-free poundcake (Entenmann’s)
  • 1/3 cups lowfat vanilla ice cream
  • 2 tsp confectioners’ sugar
  • 1 cup fresh pineapple chunks
  • 2 kiwi, peeled and cut in wedges

Cooking Instructions

Cranberry Sauce: Cook cranberries, sugar and 1⁄2 cup water in a covered pan 10 minutes. Press through a strainer into a bowl.

Spoon onto 4 dessert plates. With a 3-in. star-shape cutter, cut a star from each cake slice; save scraps. Pile scraps on sauce and top with 1⁄3 cup ice cream and a star sprinkled with sugar. Surround with the fruit.
