METHOD:
In a skillet, render the sliced bacon. Add and cook the mushrooms, garlic and shallots. Remove from heat to cool.
In a bowl, combine the ground chuck, oil, beer, celery leaves, minced bacon, thyme and salt and pepper. Shape into patties. Grill the burgers to your desired doneness.
Cut the brioche into slices, and then shape the same size as the patty.
Add cheese, if using, to the burgers and toast the brioche. Top each burger with tomato slices and place between slices of brioche.
Round Out the Meal:
Serve with a vanilla milk shake and truffled potato fries
