  • Grated Parmesan cheese
  • Clarified Butter

Cooking Instructions

Cut into 2 x 2-inch slices: 1-1/2 lb. veal cutlets, 1/4 inch thick

Pound thin until they reach about 3 x 3 inches. Dip into a: Bound Breading2

Add to bread crumbs an equal amount of: Grated Parmesan cheese

Allow the pieces to stand at least 15 minutes, then saute them until crisp in: Clarified Butter9

about 2 minutes on each side. Serve with: Quick Tomato Sauce, page 352
